St. Patrick’s Day… Get your green on!


Happy St. Paddy’s Day! It’s the festival for all things Irish.. and all things green! Perfect for some healthy indulgences and spring time treats.

If you are like me, then the classic green smoothie will immediately spring to mind, but there are plenty more sweet and savoury recipes to whip up in celebration.

How about this easy spring soup? It’s fresh and green, light and creamy and the perfect snack to welcome St. Patrick’s Day.

DFMpea soup

Spring Soup
Serves 2

1 cup (130g) frozen peas
1 cup (230g) shredded zucchini (courgette)
1 cup (100g) tight packed spinach
1 onion (approx 100g)
1 tablespoon (16g) cashew butter to make creamier (optional)
2 cups (500ml) vegetable stock

1 cup (100g) cauliflower (or broccoli) chopped into small florets
1 teaspoon (5g) coconut/olive oil
1 teaspoon (2g) dried mixed herbs
Handful crispy kale chips (optional)

Saute the onion for approx. 5 minutes until softening. Meanwhile prepare the cauliflower/broccoli and mix through with the oil and herbs. Spread in an even layer of a baking sheet and bake at 180C/350F for 10 minutes until lightly crisp.

Once the onion has softened, add the peas and courgette with the stock and simmer for 5 minutes. Add the spinach and simmer for a further two minutes. Add the cashew butter if using before blending with a immersion stick blender until smooth.

Serve the soup with the roasted cauliflower on top and sprinkle over crispy kale chips if desired.

My little trick using coconut flour (no nuts!) to make a cheesecake topping or a ‘clotted cream’ style spread is always on the go in my kitchen- so easy and versatile!
